What should the DOCTYPE look like when I view my website source code. Currently it is this:
<!DOCTYPE html PUBLIC "-//W3C//DTD HTML 4.01 Transitional//EN">
but is there something missing from this in order to be compatible on different browsers/platforms.

The code generated by EasyWebEditor is automatically compatible with all platform, so you don't have to worry about this.
We constantly update the code engine, and internally (the AEH archive file) the pages are stored as "neutral" metadata, so if you publish even a old work with the current version, it is automatically rendered in a way that is compatible with everything.
